I don't know if your problem is the same I had, which my X resolution would be higher but gnome just recognizing 800x600. This way gnome would now show full screen, but rather just use a small part of my monitor.
All I did was to change this script:
/etc/sysconfig/displaymanager
and commented the last line regarding to randr mode_auto which was forcing my screen resolution to 800x600.

Oh yes, I did that several times... (old windows habbit). I restarted the machine also!
Each time I change the resolution and try to save it a window comes with "Test" button. This takes me to a screen that looks like adjusting screen size and position etc, I guess this also restarts the x-server.
What else I might be missing?

Starting with the simplest solutions first. Many people don't realize that you have to restart the xserver in order to have the new resolution.
Have you done this? You can restart the xserver by pressing ctrl+alt+backspace.
