As a result, none of the TeX/LaTeX related apps work.
That's only a symlink to a symlink, and you haven't checked if the target does exist.
/usr/bin/pdflatex -> ../share/texmf/teTeX/bin/i586-linux/pdflatex -> pdfetex
which should belong to package "tetex".
Actually, I found the issue. the package texlive-bin-2007-68.i586.rpm hadn't been installed, even though it had been marked as installed in YaST. Installing it from the command line fixed the issue.
