OK, then how do I get Linux to go to the 192 network as default and remove the 10. network ad default route?

you can add your own script to do this in /etc/sysconfig/network/if-up.d the scripts in this directory are executed whenever an interface is ifup -ed. These scripts receive the name of the interface and some other data, so you can determine which interface is up (in your case eth1), and perform specific actions. Take a look in /etc/sysconfig/network/scripts, there are plenty of examples of if-up.d scripts.
