Probably, but i'm guessing that with a dual xeon you won't notice much of a difference, at least not for desktop use. Maybe if you compile a lot of code you might notice. One of my boxes has a dual core and compiles about 50% faster than my single-core boxes (all approximately the same 1.2-1.4GHz). Since compiling is my most time-consuming task, i notice the difference.
