I used Evolution for a long time but eventually switched to KMail because, IMHO, KMail seems to be much more flexible and is definitely easier for a user to configure and customize.
kmail has a send now option and a send later - the send later places the message into the outbox and waits for the next send and receive. This is the feature I think you are looking for. I do not know if evolution offers the same option.
