The vote for ease of use and sanity retention would seem to go to Postfix by a
large margin. At one time, Sendmail also had a lot of security issues but
maybe those days are over. I stopped using it as soon as I could. There are
other ones out there, of course. On a Debian system you'd get Exim as the
default mailer.
