The splash screen is put into the initrd, so you'd need to re-run /sbin/mkinitrd to get the new resolution.
ALso the vga change has done nothing to improve the resolution of the grub graphical menu (which isn't surprising since it comes before that stage), so how do I change that?
Not sure about that one, I suspect you would have to play with the file /boot/message, have a look at the gfxboot package and mkbootmsg
