There is a lot to this, I think this is why SuSE has their SLES offering,
which doesn't have as new software as the 'Professional' version, but on the
other hand is more stable and more thoroughly tested.

It's really two different market segments. One market wants the latest and
greatest with all the bells and whistles ('Professional') while another wants
something they can stick on a server and leave it running there for years
('SLES'). It's difficult, if not impossible, to satisfy both markets in a
single version.
