How can I change the function of depressing the 'Shift+TAB' keys ie I do not want it to switch desktops but to rather go to the previous field in the KDE GUI?

This is driving me nuts as I know it is there somewhere.
You're right, it's in there ... somewhere ... From the KDE menu choose "Control Center". Find and expand the "Regional and Accessibility" category on the left and select "Keyboard Shortcuts". From there you can assign the myriad actions to the keyboard sequences of your choice. The first section is "Navigation", wherein you'll find "Walk Through Windows" and "Walk Through Windows (Reverse)", which are the particular actions you want to remap.
