Synaptic and stable versions

Just wondering if it make sense to check whether a program is not stable and
an update is stable.
I have a dial up connection so basically I do no complete update. I have a
look at the programs that I use very often and have a look if they are
stable.
All of the updates say that they are stable but very often the installed
version does not have the stable label. Does that really mean that those
programs are not stable and should be updated, even if they did not cause
problems in the past?
