Use mailto as the protocol, and then whatever you want to use as your mail client in Program with the following format:
evolution "%s"
(If you want to use evolution)
The mail client has to be able to handle a fully formated mailto: URL (which will go where the %s is - that's why it's in quotes, there can be spaces in it)
