How to add a hot swapable SCSI harddisk?

I need to add a harddisk to a running system (Compaq).
Some questions I need to be sure before I can do that:
1. what is the SCSI id of the existing harddisk? So that I use for sure
a new ID.
2. the new harddisk should get three partitions:
swap
temp
var
How do I format these partiotion, I guess I should use reiser, shouldn't I?
3. How to move all temp & var to the new disk Mv is not the problem, but
so that all programs continue to log and that a minimum of time a log
will be lost!
