Right click on the application in question. Select Properties from the pop-up menu. Now Left click the icon shown in the application properties dialog, next to the titling ----- application.desktop.
Choose a new icon from the system icons using the pull-down menu in the upper right corner and selecting one, or navigate to another directory containing icons you have extracted on your own.
That only changes the icon used to launch the application (which I have already done) -- I am talking about the icon used for individual instances of this application which is displayed in the Taskbar when they are running. Changing the icon in the application properties dialog for an application which does not have a predefined icon for the taskbar does not automatically replace the 'X' used for them with a small version of the icon chosen by the user. Hope this better explains what I meant.
