Bind is only for DNS. If you use your computer to manage your domain you need
it. But if you are asking question like this, I bet you can safely turn off
it.
I think that the easier MTA is postfix. I have been able to make it work in
very short time and I had no previous experience. I also used qpopper as a
POP server. Everything comes with the distribution.
