Sorry - should've mentioned that I'm knowledged enough
to restart any services I've made config changes to.
And I will make it clear: I can send email to:
kevin.jackson@xxxxxxxxxxxxxxxxxxx
from my linux machine and it lands in my Outlook
inbox instantly.

I think perhaps you should restart cron (/sbin/init.d/cron restart) and, of
course, have your email subsystem (typically sendmail) working right too.
