First of all, thank you all very much for your replies on this matter.

Yes, KDE really seems like a good environment for a newbie. I guess I could
help her out, tweak it and make it even more userfriendly than it already is
(start X11 immediately after boot, etc.). The sooner you turn them to Linux
the better, wouldn't you say?

Which books would you recommend? The only books they have in the libraries I go
to are the ones dealing with Photoshop so she may have to order. As far as
scanners go, she had her eye on a HP 3300C. The thing is, it's an USB model.
We'll have to find out if there's also a parallel version available.

What kind of CPU would you recommend for a machine used primarily for graphical
work - any special things that need to be taken into account? Would a
Celeron be a good choice? If a non-intel CPU can do the job right it would be
even better. I know an Athlon can do the job but how about a K6?
