That's just plain bad system administration on their part.  If they're
moving the server and the user database is not complete, they should turn
off sendmail or disconnect the ethernet so anyone who tries to send them
mail will get a fail but the mail will be queued up and as long as they
finish the conversion in a day that should get you your mail since almost
every server will retry for more than a day to send mail, approx every 4
hours.

You should try procmail if you haven't already, it's almost required if
you're going to do mailing lists subscribing.
