This doesn't mean anything. You would only know by checking the respective log of kernel-xen when booted with xen.gz.

Without having seen the log thereof, it's hard to say if you really can't. Did you attach a serial console?
I attached and tried to set it up. So far no luck getting any output at all. On my todo list.
If not, does Xen itself print anything to the screen when you pass it "console=vga"?
I'm aleady passing GRUB_CMDLINE_XEN=" ... vga=gfx-1280x1024x16 com1=57600,8n1,pci console=com1,vga ... " which was sufficient on a pre-UEFI, pre-Grub2 system.
