There is no "undo", but you can install the old version again of whatever you
update. To make sure
of this, you'd better keep local copies of everything you install/update (tell
zypper to keep
copies, for instance).

The coming 11.3 yast2, gtk flavor, has a new undo functionality, but I'm unsure
of what it can do.
