Hi David,
I am running openSUSE on a similar board. Just
- install it on a random 32bit ppc box (use qemu if you don't have one)
- copy the rootfs onto a storage accessible from your e500mc
- build and use your own kernel
Anything bootloader related won't work, but the rest is fine.

It has a uboot environment, which I have a rudimentary understanding of how it works, but not how to create an appropriate installer or image for it.
Any help would be graciously accepted. I am even willing to connect you up on my RPi via ssh so you can see the board via the serial port.
I am definitely sucking from a firehose on this one.
