Hi,
I also noticed this. I'm able to switch the keyboard to and from
Apple/Macintosh, which swaps the apple key. I can also use the keyboard
alternate settings in gnome to swap the alt and win key.
The problem is that the gnome main menu doesn't seem to respect these
options. I filed it here:
