If you want to add/remove entries try looking at /opt/kde3/share/applications
and /opt/kde3/share/applnk
Of course, if you delete a .desktop file, this may or may not play havoc on
the RPM that installed it.
When you add/remove .desktop files, you may need to do a "kbuildsycoca " in
order to see the results right away. From my experience, KDE will eventually
see the changes and do the update itself.

Hi,
I have to edit the menu of the k-button for all users on a machine but I
can't find the location where to do that. Can someone help me?
Thx, Guido
