Right click panel -> taskbar settings -> only show tasks from current desktop

While the taskbar, and the rest of the panel including default widgets is 
probably the least configurable on any desktop in the world (xp, vista, kde3, 
gnome, osx...), that specific setting _is_ available.. ;-)
