Nick You should have an "evolution" directory in your $HOME, which contains all your data, addresses, mail, filters, etc. that you should need to move from one setup to another. I thought evolution had an export feature though, but as you mention, it does not. Maybe the 1.5/1.6 version will contain such a feature.
