HDDからの起動に拘らなければ良いのではないかと思います。

インストール中の初回の再起動前の方法についてこの英文メッセージには書かれている訳ですが、
インストールCDやDVDを使ってレスキューモードで起動して/パーティション(/varを別に単独で
用意している様なら/var)を/mntとかにマウントして参照すると良いのではないかと。
RAID1ならミラーリングなのでそれぞれのHDDはまったく同じ内容のはずですし。
