You are correct - it is the rpm release versions in G:S:2.30 that are earlier than in 11.3. Which means that if you simply add G:S:2.30 repo, then "zypper up" (or yast) won't install anything from it until the rpm release version in G.S.2.30 finally catches up with what was released on the dvd.

It's recommended to do zypper dup when using G:S:2.30, though, so it shouldn't be a big issue. See http://old-en.opensuse.org/GNOME/2.30

It is, afaik.

Sorry for being dense, but why are there differences in rpm release versions between 11.3 and G.S.2.30  if G.S.2.30 was seeded from the same rpm packages as 11.3?

I don't know. Do you have an example we can look at? It'll be easier to check what's happening this way.
