In the App Browser, right click on an app and select Add To Favorites.
In the main menu, right click on an app and select Remove from
Favorites.

What we are trying to do right now is to add a way for the user to
change properties without having to go through the gconf-editor. So
Enhancement Requests will have to wait a bit (You can always add them to
http://en.opensuse.org/Redesign_of_GNOME_main_menu_and_application_browser

Not sure if you can say Minimum/Maximum recent apps to 0.

Again, this would be an enhancement to the code, which isn't the primary
goal of this particular exercise. As a side note, I can tell you that I
did implement this as a test, and it looks strange without them.
