I personally use KolabNow, a Swiss-based company. They're not cheap by a long shot, but their customer service is good and Swiss laws are generally quite favourable to individual privacy.
Anyway I have my GPG keys set up for more private correspondences. The problem is convincing people to actually use GPG-based emails regularly!
