And there is no reason why "less" will not gain the ability to read journal entries, just like it is able to read messages.gz.
human readable mean with as little machine help as possible, and on evry system. Full ASCII is readable everywhere, even on a smartphone, windows or any system recovery. It's printable as raw data on most printer. that's why plain text config is so good. xml is the worst case I can still accept, because it needs only rtfm or some judgement to understand and logs may have to be read from as harsh tool as dd and hex editor is a HDD fails by the way this may be a lost battle, applications needs more and more complex data, so more and more complex logs.
