Systemd will log an error now, when /etc/mtab is not a symlink.

I agree writable /etc/mtab is something we should get rid of (and
AFAIK util-linux upstream is working on it). OTOH, there is still some
information missing in /proc/mounts compared to what's written in mtab
- e.g. the 'user' option will if mtab is a symlink to /proc/mounts.

How do you plan to deal with this?

It will likely be stored in private file(s) in /dev/.mount/*.
