Yes, this could be done.
However, depending on whom you ask, people will love or hate
such questions.
The pattern mechanism allows you to define a "Database Server"
pattern which requires a "database_engine".
MySQL and Postgres could both provide "database_engine" and
serve to fulfill this requirement.
By default, one of these will be preselected but the user
can de-select one for the other.
