Also why does the prebuilt images stop working when you make a usb image?

This seems to be one of your issues(misconfigured dnsmasq), we use
the dhcpd config borks horribly with a random error - can't get it to work
at all
so using dnsmasq, and fun that is to...
dhcpd, let us know the errors you get so we can try to fix it.
