I had this working very well with Demon. You need 2 server packages 1 to collect the mail ( sendmail ) and 1 to allow your users to get mail from their workstations ( pop3 ). This isn't too hard once you realise you need 2 extra packages that are not installed by default ( I think ). To configure Sendmail get the sendmail-cf package I found the hardest part of this as a new Linux user was working out how to read the docs :-). For users I found the ipopd package best all I did was install it and my users can collect email useing their preferred program ( OutLook etc ). I don't know how to set this up as I didn't touch anything :-) Just installed and it worked. It provides both pop and imap.
