In addition, you have to back up ~/.gnome2_private/Evolution, too.

If I have understood you correctly, the solution should be quite
straight forward.

1) Back up the three directories (with all subfolders) mentioned above
(~/.gconf, ~/gnome2_private/Evolution and ~/.evolution e.g. by burning
them on a CD or coping them onto a USB-stick)
2) Reinstall your system
3) Copy the directories back
4) Start Evolution.

Or did I understood completely wrong, what you are looking for?
