Also ich habe mir Mühe gemacht (viel war nicht nötig) und folgendes

12. Enigmail replaces ">" in quoted messages with "|"?
This is not really a bug, but a workaround that Enigmail uses to handle
the text=flowed formatting used by Mozilla, which can invalidate
signatures. You can avoid this replacement by unchecking the option
Allow flowed text (RFC 2646) in the EnigmailPreferences panel under Sending.
