I would also suggest to have "obs-server-development" and
"obs-server-deployment" packages, like we have e.g.
for the  linux kernel.

What would these packages contain? Different versions of the build service or do you think of splitting off parts only needed for development?
Sorry, the naming was misleading. I thought about a version from the SVN trunk
and the version you deploy on .opensuse.org buildservice, that I called "development" and "deployment"
versions.
Maybe Adrian provides us with some Information, on which Revision
.opensuse.org OBS deployment is based.

There is http://build.opensuse.org/main/about, but it doesn't seem to be up to date or overly useful. Maybe it would be nice to fix this page to actually show which versions are deployed.
Should also contain the backends to be useful.
Klaas already mentioned to put these information to SVN repository:

Do you have a branch in the Subversion repository for the deployment of
OBS on .opensuse.org?
No, not yet. A proper release process of the buildservice code with for example
 - tagging and opening a branch in svn
 - proper release numbers
 - documentation etc.
is one of our next targets, namely "Improve the development infrastructure".
