Could it be a power issue? If one of the power rails get under voltage due to the GPU drawing too much power a lockup could occur. Try swapping the PSU.
I had considered the possibility and figured I'd try swapping out most/all of the hardware one at a time, but also seems odd that the issue never occurred on Windows. It could be something related to specific instructions, loads, or power saving algorithms. I swapped out RAM as well. The only time I had a faulty PSU the machine would reboot anytime it would increase load. Granted that may not account for all possible failures. Anyway, I had an 850W PSU sitting around so I swapped out the one in the machine for it.
