That's hard to explain when trying to help people who are inexperienced with linux. With a non-UEFI system, we can use F3 to set video choices during install. However, that is not available for a UEFI boot of the 64-bit install DVD. Perhaps also a good idea for the 64bit live media. And possibly a textmode install menu item might be useful too.
