Gnome-settings-daemon power uses time-policy for the critical actions. That
means g-s-d issued a warning when the remaining time is less than 300 seconds
and takes action when the time is less than 120 seconds.

From the log, upower reported "time to empty: 56 seconds", so g-s-d put your
system into hibernation.

As a workaround, you can switch from time-policy to percentage-policy by the
following command:

$ gsettings set org.gnome.settings-daemon.plugins.power use-time-for-policy
false

It would be better if we can find out the root cause in upower since gnome uses
time-policy by default.
