Kernel: DESKTOP kernel as it comes with 11.4, after online updates it still
happens.

Mount options: in the /etc/fstab the options soft,intr were used.
I also tried without options (from commandline) and exactly the same happens.

It also happens with the NFS mounts done by YaST when a repository is specified
on an NFS server.

This /proc/mounts entry is from the same system but reverted to 11.2:

servername:exportpath mountpath nfs
rw,relatime,vers=3,rsize=32768,wsize=32768,namlen=255,soft,proto=tcp,timeo=600,retrans=2,sec=sys,mountaddr=172.20.11.6,mountvers=3,mountproto=udp,addr=172.20.11.6
0 0

(I have backed up the 11.4 and restored a previous 11.2 VMware data recovery
backup to get the system operational again, will do further tests under 11.4)
