When this time for one source repository goes above 2 hours, then >2:00:00 is shown. Nevertheless the total amount is still a sum of all packages (i.e. 2:13:12). It should be
2:00:00 as well, as you can't add explicit numbers to a ">xxx".
BTW: I would increase the 2 hours to e.g. 4 hours, as network install with large bandwidth and even a normal large installation may exceed two hours and it is still interesting to see when it ends. I agree that for long times the approximation will be unreliable, but 2 hours is to short.
