got the same on my machine (11.1 beta 2 / Factory).

As a workaround I could do the following:
1) Change displaymanager to kdm (was gdm, as I'm gnome user)

This will still not help to start yast2 and the like from the start menu, as
those launchers all invoke gnomesu, BUT:

if you open now a terminal, change to su and THEN start yast2, gedit,
<whatever>, the programs actually start up.

Seems to be an issue in latest gnome stacks, maybe a change of the Xauthority
format?

The output of xauth -v list is completely different in this scenario than with
gdm as desktop manager.

in gnome, with kdm as DM:
xauth -v list
Using authority file /home/dominique/.Xauthority
messiah/unix:10 MIT-MAGIC-COOKIE-1 3d949ab34b4ca11c866127e342ce1d28

I'll post another comment just later, when changed back to gdm with how the
output looks there.
