fstab correctly contains "ntfs-3g" and I cannot see any mount of ntfs
during installation phase:

mount -t ntfs-3g -ousers,gid=users,fmask=133,dmask=022,locale=en_US.UTF-8
/dev/sda1 /mnt/windows

Which look like a correct mount using ntfs-3g to me.

Note: there is also another internal mount to detect the available space on a
device and since this is readonly, it uses ntfs, but this mount is not
related to following mount during installation.
