openSUSE 11.0 has 11 images available
You can see them on DVD1 in the directory "images"

no :) One image per common usecase

that depends. As much as possible is covered by images and the rest is done 
by normal RPMs.
We have a lot of packages more than one time on the media. One time as RPM 
and then in one (maybe more) images again.
