Strange Postfix Log Entries
The log entries below were culled from our Postfix 2.0/SuSE 9.0 log file
which would seem to indicate that we have an open relay problem when the
from address is empty (from=<>). I have relay_domains set and have tested
it with a "real" address and it works, i.e., does not relay mail for
unlsited domains.
Questions:
1. Is my analysis correct, i.e., is it relaying mail when the from
address is null?
2. What can I do about it?

I don't think it is correct. From address <> is usually a bounce, an error
message from your mail server. In the logs you posted, I would have expected
to see a Connect line in connection with the mail if there were something
fishy going on.
Look further up the log and see if you can't find an entry with
from=
