It depends how brave you are. suse-projects, suse-people, kernel-of-the-day, kde-unstable are more likely to be, well, unstable, but probably work fine in most cases. The suser- components are individual contributions, usually with each being concerned with a particular software group, so they may be useful if looking for particular packages. Packman is useful for multimedia stuff. Some conflict with each other - gnome and usr-local-bin, for example. If you prefer to be really safe, stick with base, security, update (the -prpm ones are patch rpms, so smaller downloads to update already-installed packages).
