While not so much open source, you may want to consider recent discussions about OpenDocument, particularly what's going on down in Massachusetts.

if it's a matter of cost, you could google for Linux-Windows TCO
studies (and be careful to check who funded them and whether the
methodology employed makes sense).

There are other studies, arriving at the opposite result.
If it's about freedom, there's little need to do a study (except
GNU/Linux vs. BSD (vs. OpenSolaris?) and maybe comparing distros).
I'm sure that Novell can share some experiences, too.
