The point of the imap server was to hold my mail locally, accessible from any of the machines. For outgoing, there was no need to pass through any kind of in-house server since outgoing mail is just going to the ISP's SMTP server, and there'd be no added value to extra handling.
That does depend on what you want/need. postfix does a lot of neat stuff. For inbound for instance, you could be doing virus-scanning etc. For outbound, rewriting local address to external addresses is one example.
Good point about the virus-scanning, especially if my wife ever wants to read her mail while booted into Win98 <shivers>. About the re-writing of addresses: where/why might I find that useful? You might use a domain-name of "local.net" internally, such that emails are sent to e.g. "kevin@local.net", which of course won't do externally. Externally perhaps you use "kevin@kevinshouse.net" - and postfix can automagically translate/rewrite between local.net and kevinshouse.net. It's probably not the best of examples of postfix features - but many of them only really become useful when your network grows.
