That depends on the version of word previously installed. Some versions
have an associations option. Some don't.

In all cases that I have seen, simply right clicking on any .doc file and
select Open With, Choose Program, (select Word from list) check the
box at the bottom to always use this program.

This facility only became available in XP IIRC.
If you have it, its even easier than using the OOsetup program.

I did RTFM (and I quote):

To change the association of Microsoft Office file name extensions to open the files either in OpenOffice.org or in Microsoft Office, using Microsoft Windows:
  1. Exit OpenOffice.org and the OpenOffice.org Quickstarter.
  2. Run the OpenOffice.org Setup program:
    Click the Windows Start button, choose Control Panel, click Add or Remove Programs, select the OpenOffice.org 2.0 entry, click Change.
  3. In the OpenOffice.org Setup, check the Modify option and click Next until you see the file types page.
  4. Select or deselect the file types. Click OK and complete the OpenOffice.org Setup program.
And, since I am working for a school system you can bet the most recent version of MS Office is "vintage."  When I follow the instructions as above from TFM I can get s far as Add or Remove Programs - OP shows but there is not a choice to Change/Repair as there is for other programs. 

There is not even an uninstall when I go to ALL PROGRAMS and select OP.  I thought the problem was in the set up choices so, I determined I would uninstall - reinstall and make different choices - but I cannot even uninstall it!

I seem to be up that proverbial polluted tributary without any means of propulsion.
