I also contacted the kiwix team by now and it turns out they have their own tool for creating the needed zim files for kiwix. So I made a request for the docs page and another one for the wiki and we will see how it goes. :-)

You can use youzim.it to create your own zim file from doc.opensuse.org.
Use the the single page HTML.
